I have little time to prepare meals. I have a few recipes that take around an hour to prepare but I have made them too much. I have two months left of a crazy school/work schedule and I will need to eat. But I am out of ideas and I cannot make any of my normal meals or I think I might gag of throw up.

Hey Ashley, I know how you feel about cooking...you need something quick. I have 2 for you: 1. Cranberry Chicken--1 can of whole cranberry sauce, onion soup mix, 1/2 bottle french dressing. mix and pour over chicken breasts in a pan and cook. serve with rice. 2. Baked Ziti--buy a box of ziti noodles in the store and read the directions...glorified spaghetti, but can be made in the morning and put in the fridge until baking time. Good luck and hang in there!!!

Ashley, as I write I have Chicken Cacciatore cooking in the oven. Very eary and quick.
Prep-time: 15 minutes
3lb. fryer cut up into 8 pieces (I used legs and thighs.
1 Jar Marinara pasta sauce
1 cup sliced mushrooms.
2 garlic cloves, minced (I used the ready minced galic in a jar)
1/4 cup grated Parmesan cheese.
preheat oven to 350
Remove skin from chicken and trim ay excess fat.
Coat a 9-inch glass baking dish with cooking spray and place chicken in bottom of dish.
In a medium bowl, combine past sauce, mushrooms, and garlic. Pour sauce over the chicken. Sprinkle chicken with Parmesan cheese.
Bake for 35(or more) minutes.

Company Pasta
3 Tbs. butter + 1 Tbs. olive oil
1 clove garlic, minced
1 small onion, chopped
1/2 cup chopped ham
2 chicken breasts, 1/2 inch pieces
1 cup white grape juice
1/2 cup whipping cream
1/2 cup sliced olives
1 Tbs. chopped fresh parsley (optional)
1/2 tsp. pepper
11 oz. penne pasta
parmesan cheese
Heat butter & oil. Saute garlic & onion. Stir in ham & chicken. Cook until chicken is browned. Stir in juice. Heat over high until hot. Stir in cream, olives, parsley & pepper. Simmer uncovered for 30 minutes, until a little thicker. (Doesn't get too thick.) Cook noodles & toss. Add parmesan cheese. (I add some cheese and stir so it melts & then sprinkle some more on top.)
